Nikos’ dream is to make the best olive oil on the entire island of Crete. He comes from Kalamafka, where his trees live, and while he works part time in Athens he really loves coming home to look after his olives. He’s the youngest of our farmers, and the most ambitious.
Kalamafka has a volcanic terroir with dry, red soils. The trees sit on well drained terraces, aired by winds from the sea, and are watered sparingly from natural springs –an ideal environment for growing excellent koroneiki olives. Nikos is careful to use only the best products, organic certified, in his production. He aims for quality and taste above all else. With the extra money he earns from selling to Amfora he plans to expand his production by renting more land.
Nikos’ extra virgin olive oil suits a palate that likes spice and pepperiness, but not so much that it overpowers. It retains the balance of a great Cretan oil. It’s unfiltered, with a great golden green colour, and 0.5% acidity.
