Another of our farmers from Kalamafka, Michalis’ extra virgin olive oil comes from the same steep volcanic land, from trees grown on terraces leading down to the low lands of the island near the sea. The trees are fed with spring water – no artificial irrigation -- on well drained dry red soil.
Michalis’ trees are old; some were planted hundreds of years ago. He feels the weight of his responsibility to the land, his trees and his ancestors who farmed here for generations. Like many of our Kalamafka farmer she focuses on sustainability, meaning he avoids use of chemicals as far as possible and minimizes inputs such as fertilizer and pesticides.
His filtered olive oil has the most balanced flavour profile in our range, suitable for all uses of oil from deep frying to sprinkling on soups, salads, and dunking bread. Michalis achieved great free fatty acid levels of 0.4% to 0.5% in his 2020 olive oil, a great achievement in a year where acidity levels all over Crete were unusually high.
